"Vegetarianism now frankly aims to emerge from a sentimental idea into a scientific truth" (JAMA, 1915)
A FLESHLESS DIET
By J.L. Buttner
First edition of an important book in the American discourse on vegetarianism, in which a Yale Medical School graduate argues the medical benefits of eating less meat.
A FLESHLESS DIET
"It is in the name of science that we advocate it."
This work is "a much more rational and scientific case in behalf of a vegetable diet than most of those who have heretofore made the attempt" (contemporary review in the MEDICAL STANDARD). It generated significant discussion in the medical community, with some seeing it as barely-clothed propaganda and others impressed with its scientific approach. Buttner notably cites a number of sources and studies that suggest vegetarian diets may be advisable for those suffering from heart disease or (Type 2) diabetes – assertions that were looked upon in 1910 as questionable, but today are widely accepted in the medical community. An important landmark in American nutrition.
